What do you do when life give you lemons? Find a tin of peaches, some ice and whip up this delicious refreshing Peach Lemonade of course. Least I think thats how the phrase goes! It would also be rather delicious with a dash of something stronger….
I recently came across a post on Instagram which purported to offer a link to a recipe for Peach Lemonade. Brilliant I thought – I love peach and lemonade – what a combination! So I clicked through and found myself on a large blog site batting away a million pop-ups and scrolling past narrative repeated 4/5 times before finally coming across the recipe. It called for 2 ingredients – frozen lemonade and frozen peaches. That is not a recipe! So I experimented and came up with one of my own using ingredients available everywhere.
I am a big fan of tinned peaches. Whilst I am a bit of a fruit dodger, peach is easily my favourite fruit flavour although I do still struggle with the texture of fresh ones. You could of course use fresh peaches to make Peach Lemonade but I’d think that they would need a good simmer in some sugar syrup to soften them up before blending. Cool them first too of course.
I also love to use tinned peaches to make my Peach and Ginger Crumble and Scotch Pancakes with Bourbon, Peach and Ginger Compote. I have plans in the works to make a quick peach sponge pudding too – watch this space!
As I mentioned, it would also be a great base for a dash of something stronger – Vodka would be an obvious addition, as would a White or Golden Rum. Those so inclined would likely add in a drop of Gin (not for me tho – ew!).
100g Tinned Peaches (In Juice)
3 Tbsp Juice from the Tin
2 Tbsp Caster Sugar
500ml Sparkling Water
- I use my little Kenwood Mixer* to whizz up the puree. You could also use a blender or larger processor. It would be possible to chop by hand but the texture would be a little lacking. A pestle and mortar would be a good manual option.
- I also use a lemon reamer by Typhoon* to get the maximum juice from my lemons. I prefer one with a pointed end rather than a stub end like many reamers have. Be careful not to stab yourself when using it though! And yes, ‘reamer’ is a very funny word!
- For still Peach Lemonade just use still instead of sparking water.
Add 100g Tinned Peaches, 3 Tbsp Juice from the Tin, 2 Tbsp Caster Sugar and the juice of 2 Lemons to your mixer/chopper and whizz to a puree.
Taste the mixture. Bear in mind it will be diluted later but check that the balance of sweet and sour is to your liking. Add more sugar or lemon juice as you desire.
Pour the puree into 2 glasses and add ice to the glass. (Add any desired alcohol at this stage). Top up the glasses using 500ml Sparkling Water. Use a straw to mix together and chill the drink.
Serve with a slice of lemon cut from the outer edge to the centre which creates a slit to slip over the glass edge.
